Betty Crocker, Julia Child and Martha Stewart walk into a bar...

Cookie cartoon - put a lovely bow on it!
Cookie cartoon - put a lovely bow on it!

What moves me to bake? Pandemics and a hankering for my most favourite cookie in the world. Key ingredient being oatmeal. I can hear a crowd of folks 'ewwwwing' while a another gaggle of people are 'hip hip horaying'. Oatmeal rocks! I trick my brain into turning down the guilt and 'bad food' bullshit rhetoric with a healthy heap of oatmeal. But what I really seek is the comfort of a cookie. So sue me!

Here's the Cookie&Kate recipe the internet gods dolled out when I realized I didn't want to flood the mixing bowl with white or brown sugar. Maple syrup and peanut butter (and of course oatmeal) are the heavy hitters in this magical mixture. Note: magical because of its yumminess and not because of the addition of cannabis. Haven't got the baking prowess to even begin to put that kind of concoction together. No, this delightful after dinner dessert will be rounded out with milk chocolate and semi-sweet chocolate chips. Plus the addition of coconut oil gives the cookie a delightful nutty taste. I normally don't dig a coconut taste but because the fat task was shared with butter, they've collaborated beautifully together. They get an enthusiastic thumbs up from this cookie monster.

A doubled recipe - why not? Three bakes, 1 tray to enjoy with some coffee, 2 other bake deliveries to bump up my karma and dough left over for a future craving. Our landlords are the happy recipient of one cookie delivery while our neighbourhood dog friend gets the other. Ouf! had the cookies stayed in the house they would have been demolished by their creator. Instead these morsels of chocolatey goodness spread joy, comfort and appreciation while still hitting the spot for my hankering for a cookie (or 4).
